Wine Production


The vines cultivated are the typical Tuscan varieties, such as Sangiovese, Cannaiolo, Trebbiano toscano and Malvasia, which are used for the production of the greatest Italian wine, the Chianti DOCG. The harvest begins in mid September, when grapes are fully ripe. While some grapes are used to produce the table red wine for family consumption, the main production is carried to the Cooperative Colli Fiorentini in Montespertoli, where modern winemaking techniques are used to produce the wines which guests can buy directly in the farm shop.

Extra Virgin Olive Oil


The other leading produce is the Extra Virgin Olive Oil produced from the typicalTuscan olive varieties, such as Frantoio, Leccino, Moraiolo e Correggiolo. Following the best Tuscan tradition, olives are handpicked in November and December, stored in airy containers for few hours and then sent to the oil mill of the Cooperative and cold pressed. From the green colour of fresh pressing, the oil tends to yellow, always retaining its healthy features.

And other local products


Besides wine and Extra Virgin Olive Oil, guests can savour traditional sweet wine, “Vin Santo”, homemade jams and preserves, fruit and vegetables in season, as well as a wide choice of wines from the Cooperative Colli Fiorentini, such as Chianti DOCG, Chianti Montespertoli, white wines, sparkling wine, grappa, balsamic vinegar and so on.
